Egusi soup is one of the important soups in Iboland, Nigeria.  It looks fresh and yellowish in color.  Egusi soup is very easy to prepare and does not take much time. 

Egusi soup is often served for lunch.  You will get it in any Nigerian restaurant.  You can even prepare it at home.  Anybody can prepare this dish, provided you know how to cook it.  It is usually served with fufu or gari. 

I love to cook and eat this soup because it makes me feel like an Ibo man.

 



5 cups water
2 cups of egusi seeds
2 cubes of maggi
1 tsp salt
Any quantity of meat (chicken, turkey, or pork)
1/2 onion
1 tsp pepper
2 packs of vegetables (7 in a pack) or 1 packet of spinach

First, add 5 cups of water in a cooking pot.  Set up the pot in a fire (either a stove or a gas cooker).    Boil for about 10 minutes.  After that, wash the meat thoroughly with water and salt. 

After you have washed it, put the meat inside the pot.  Boil for 5 minutes, then add ½ washed onion, 2 cubes of maggi, and 1 tsp salt to the water.  Wait for 10 minutes. 

Next, grind 2 cups of egusi seeds.  Mix them properly in that water.  Boil for 10 minutes.

Lastly, cut and add a packet of spinach.  Boil for 5 minutes.  After boiling, take it off from the fire.
